Avocado and lentil salad with creamy whipped feta

Equipment

  • 1 Food processor You can use alternative blending machines as well.

Ingredients
  

Whipped feta

  • 100 grams Feta cheese
  • 200 grams Cottage cheese
  • 2 tsp Lemon zest

Salad

  • 4 cups Salad leaves
  • 1 cup Avocado, diced
  • 1 can Lentils, drained and rinsed
  • 1/4 cup Sunflower or pumpkin seeds
  • 1/4 Red onion, sliced
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil

Instructions
 

  • In a food processor, blend the feta, cottage cheese and lemon zest until smooth.
  • Spread the blended feta mixture over 4 individual or 1 large serving plate.
  • Spread the salad leaves, avocado, lentils, sunflower seeds and red onion over the top.
  • Mix together the lemon juice and olive oil and drizzle over the salad, then serve.
