Avocado and lentil salad with creamy whipped feta

Whipped feta
- 100 grams Feta cheese
- 200 grams Cottage cheese
- 2 tsp Lemon zest
Salad
- 4 cups Salad leaves
- 1 cup Avocado, diced
- 1 can Lentils, drained and rinsed
- 1/4 cup Sunflower or pumpkin seeds
- 1/4 Red onion, sliced
- 2 tbsp Lemon juice
- 1 tbsp Olive oil
In a food processor, blend the feta, cottage cheese and lemon zest until smooth.
Spread the blended feta mixture over 4 individual or 1 large serving plate.
Spread the salad leaves, avocado, lentils, sunflower seeds and red onion over the top.
Mix together the lemon juice and olive oil and drizzle over the salad, then serve.
