Ingredients
  

  • 1/2 cup Quinoa
  • 1/2 cup Canned chickpeas Drained and rinsed
  • 1;4 cup Tomatoes Diced
  • 1/4 cup Cucumbers Diced
  • 2 tbsp Parsley Chopped
  • 2 tbsp Crumbled feta cheese Optional
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • Salt and pepper to taste

Instructions
 

  • Cook quinoa according to package instructions. Let it cool.
  • In a bowl, combine quinoa, chickpeas, tomatoes, cucumbers, parsley, and feta cheese.
  • Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper.
