  • 1 pinch Salt and pepper
  • 1 tsp Olive oil
  • 1/2 cup Fresh spinach
  • 1/4 cup Tomatoes Diced

Instructions
 

  • In a bowl, whisk eggs with a pinch of salt and pepper.
  • Heat olive oil in a non-stick skillet over medium heat.
  • Pour whisked eggs into the skillet. Add spinach and tomatoes on one side.
  • Gently fold the other half of the omelette over the veggies.
  • Cook until the eggs are set.
